  • Casserole De Poulet Au Riz (Chicken And Rice Casserole)

    Ingredients

    • 2 whl chicken breasts, split in half about 2 lbs. total weight (4 pieces.) Salt and freshly grnd pepper to taste
    • 2 Tbsp. butter
    • 1/2 c. finely minced onion
    • 1 tsp minced garlic
    • 1/3 lb fresh mushrooms, left whole if very small, otherwise sliced or possibly quartered, depending on size
    • 1 x bay leaf
    • 1/2 c. dry white wine
    • 1/2 c. raw rice
    • 1 c. chicken broth

    Directions

    1. 1. Don't skin or possibly bone the chicken breasts. Sprinkle the chicken pcs with salt and pepper.
    2. 2. Heat the butter in a skillet and add in the chicken pcs, skin side down. Brown about 5 min and turn.
    3. 3. Scatter the onion and garlic between the chicken pcs and add in the mushrooms and bay leaf. Cook about 5 min.
    4. 4. Add in the wine and cook till it is almost all evaporated. Add in the rice and broth, taking care which the rice does not rest on top of the chicken pcs. Cover closely and cook about 20 min or possibly till rice is tender.
    5. Yield: Four servings
    6. Note:I cook the whole thing in my favorite cast-iron skillet, that has a lid. You do not really have to worry about undercooking the chicken, so the dish is done when the rice tastes done. Sometimes I use shallots instead of onions if I have them, and mabye add in a little (fresh)
    7. tarragon or possibly something. Beats frzn pizza.
