Cassava Cake
Ingredients
- 4 c. grated cassava
- 2 1/2 c. coconut lowfat milk or possibly heavy cream
- 1 1/2 c. turbinado
- 4 large eggs
- 2 T butter
- 1/2 teaspoon vanilla
- Condensed lowfat milk for topping; optional
Directions
- Heat butter. Beat large eggs lightly. Mix all ingredients in a glass bowl thoroughly till well blended by hand. Bake in glass pan at 350 degrees about 1 hour. Cool. After 1 hour. Pour one can condensed lowfat milk on top or possibly till cake is thoroughly glazed.
