CARROTS DESSERT (Gajar Ka Halwa)

- 1/4 c. corn oil
- 1 kg. carrots, peeled and grated
- 1 c. evaporated milk
- 6 tbsp. powdered milk
- 1 tsp. vanilla essence
- 3/4 c. sugar
- 5 tbsp. butter
- 1 tbsp. raisins
- 1 tbsp. chopped cashew nuts
Directions
- Saute' grated carrots in hot oil for 5 minutes.
- Add milk and vanilla. Simmer until milk absorbed into the carrots. Stir occasionally.
- Add sugar, butter and raisins, continue stirring until liquid absorbed.
- Garnish with cashew nuts.
- You may use 1 cup condensed milk in place of evaporated and powdered milk. Omit sugar.
