Carrot Zucchini Bread
Ingredients
- 3 x egg whites whipped
- 1/2 c. applesauce at room temperature
- 1/2 c. orange juice at room temperature
- 1 tsp orange extract
- 2 tsp vanilla
- 2 c. zucchini grated
- 1/2 c. carrot grated
- 1/2 c. baby food carrots strained
- 1/2 c. sugar
- 1 Tbsp. cinnamon
- 3 c. flour
- 1/2 tsp salt
- 1/2 tsp baking pwdr
- 1/2 tsp baking soda
Directions
- Preheat oven at 350. Prepare pan(s) with cooking spray and flour. In a mixing bowl, combine egg whites, applesauce, orange juice, orange extract, vanilla, zucchini, and carrots. In another mixing bowl, combine sugar, cinnamon, flour, salt, baking pwdr, and baking soda. Mix wet ingredients with dry ingredients just till moistened. Pour batter into pan (s) and bake for 1 hour.
