Ingredients

  • 2 c. Carrots, grated
  • 1 1/2 c. Sugar
  • 1 c. Oil
  • 3 x Large eggs
  • 2 c. Flour
  • 2 tsp Baking Pwdr
  • 1 tsp Baking Soda
  • 1/2 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1/4 tsp Mace
  • 2 Tbsp. Orange Marmalade
  • 2 Tbsp. Crushed Pineapple
  • 1/2 c. Minced Walnuts
  • 1/2 c. Shredded Coconut Meat
  • 1/2 x Recipe Your Favorite Frosting

Directions

  1. Oven 350
  2. Preheat oven. Line wach c. of a standard muffin pan with strips of baking parchment or possibly muffin liners.
  3. Combine carrots, sugar, oil and Large eggs. Set aside.
  4. Sift together the flour, baking pwdr, soda, saalt cinnamon, nutmeg and mace. Gradually add in the dry mix to the carrot mix. Mix in the marmalade, pineapple, nuts and coconut. Spoon batter into prepared muffin pans. Bake in oven for 30 to 35 min, till done. Cold, then frost.
  5. Makes 12 6 ounce. cupcakes.
