- 3 eggs
- 1/2 red capsicum - diced
- 1 (about 80g) carrot - diced
- 1 (about 80g) onion - sliced
- 2 stalks coriander leaves - shredded
- Salt and pepper for taste
- 3 tbsp oil
Directions
- Heat oil saute diced carrots, capsicum and onion.
- Stir, for about a minute or two.
- Break in eggs, season with salt and pepper.
- Scramble thoroughly before removing from heat.
