Ingredients

  • 3 c. Grated carrots
  • 2 c. White wheat flour
  • 2 c. Granulated white sugar
  • 2 tsp Baking pwdr
  • 2 tsp Baking soda
  • 2 tsp Cinnamon
  • 1/4 tsp Salt
  • 4 x Large eggs
  • 1 1/4 c. Vegetable oil
  • 1 c. Roughly minced pecans Cream Cheese Icing for Carrot Cake

Directions

  1. Mix the sugar and oil. Add in Large eggs, beating after each one. Add in carrots. Sift the dry ingredients together, and stir them in. Butter a 9x13 pan, pour in the batter and bake at 325F for 40 min. Top with Cream Cheese Frosting for Carrot Cake.
