Carrabba's Italian Grill's Chicken Marsala

Ingredients

  • 4 Tbsp. butter
  • 4 x boneless skinless chicken breast halves
  • 4 x shallots minced fine
  • 1/2 lb mushrooms sliced
  • 1/4 c. dry Marsala
  • 1/2 c. heavy cream
  • 1 tsp lemon juice Salt to taste Freshly-grnd black pepper to taste

Directions

  1. In large skillet, heat 2 Tbsp. butter over medium heat, add in chicken and saute/fry, turning once, till lightly browned, about 2 min on each side. Remove and set aside.
  2. Heat remaining butter in pan and add in shallots and mushrooms. Cook till mushrooms are lightly browned, 3/5 min. Add in Marsala and bring to a boil, scraping up any browned bits from bottom of pan. Add in cream and lemon juice, and return to a boil. Season with salt and pepper.
  3. Return chicken to pan and cook, turning in sauce, for about 3 min to reheat and finish cooking.
  4. Serve with warm buttered fettucini.
  5. This recipe yields 4 servings.
