  • Carmelized Pear Salad

    This is a nice summer salad. My daughter and I had something similar to this at a restaurant. Hope you enjoy! My husband won't touch it with a ten foot pole - but then again, he doesn't eat any vegetables other than potatoes. More for the rest of us!

    Ingredients

    • 3/4 cup walnuts pecans
    • 4-6 firm fresh pears (I use red sensation pears)
    • 3 tablespoon butter
    • 3 tablespoon sugar
    • 2 tablespoons white wine
    • 1/4 cup unseasoned rice vinegar
    • 3 tablespoons white wine vinegar
    • 1/2 cup extra-virgin olive oil
    • 2 cloves garlic, minced
    • Pinch of Salt
    • Ground black pepper to taste
    • 4 cups mixed baby salad greens
    • 1/4 cup Mandarin oranges

    Directions

    1. Preheat oven to 400. Lightly toast pecans.
    2. Peel and slice the pears. Melt the butter in in a small saucepan on medium. Stir the pears and sugar together in a small bowl and then saute stirring frequently, until the pears start to caramelize, Add the white wine and continue cooking until the pears are just glazed. Remove from heat and let cool.
    3. In a small bowl, whisk together the rice vinegar, wine vinegar, olive oil, garlic, salt, and pepper; set aside.
    4. Mix the salad greens and add the caramelized pears and pecans. Top with mandarin oranges. Add dressing to taste.
    5. I usually keep the dressing separate as you will have extra and don't want to overpower the salad. I add a tablespoon or so of the dressing to individual salad bowls.
