  • Carmel Apple Bread

    I love, love, love this bread. It makes a very good present for a food gift. Freezes well.

    Ingredients

    • 1 1/2 cups chopped pecans (or other nuts), divided
    • 8 oz sour cream
    • 1 cup white sugar
    • 2 lrg eggs
    • 1 tblsp vanilla
    • 2 cups all purpose flour
    • 2 tsps baking powder
    • 1/2 tsp baking soda
    • 1/2 tsp salt
    • 1 1/2 cups Granny Smith apples, peeled and finely chopped
    • 1/2 cup butter
    • 1/2 cup firmly packed brown sugar

    Directions

    Preheat oven to 350 degrees. Bake 1/2 cup nuts in a single layer in a shallow pan 6 to 8 minutes or until toasted, stirring half way through.

    Beat sour cream and next 3 ingredients at low speed 2 minutes until blended.

    Stir together flour and next 3 ingredients. Add to sour cream mixture, stir until just blended. Stir in apples and 1/2 cup toasted nuts. Spoon batter into a greased and floured 9 x 5 loaf pan. Sprinkle top with remaining chopped nuts, lightly press into batter.

    Bake 350 degrees for 65 minutes or until toothpick comes out clean. Tent with foil after 50 minutes if getting too brown, and continue baking until done.

    Cool on wire rack 10 minutes, remove from pan and continue to cool on rack.
    6.
    Bring butter and brown sugar to a boil in a 1 qt heavy sauce pan over medium heat, stirring constantly, boil 1 minute. Remove from heat and let cool 1 minute. Spoon over top of bread and let cool completely 1 hour.
