  • Carla's Lemon Cookies

    Ingredients

    • 4 c. All-purpose flour
    • 1 tsp Baking pwdr
    • 1/2 tsp Baking soda
    • 1/2 tsp Salt
    • 1 c. Margarine
    • 1 1/2 c. Sugar
    • 1 lrg egg
    • 1/2 c. Lowfat sour cream
    • 2 tsp Lemon extract
    • 2 Tbsp. Lemon peel grated
    • 3 Tbsp. Lemon juice

    Directions

    1. Preparation Time: 0:45
    2. 1. Sift flour with baking pwdr, baking soda and salt.
    3. 2. In large bowl of electric mixer, beat margarine, sugar and egg at medium speed till light and fluffy. At low speed, beat in lowfat sour cream, lemon extract and grated lemon peel till smooth.
    4. 3. Gradually add in flour mix, beating till well combined. Form dough into a ball, wrap in foil and chill overnight.
    5. 4. Divide dough into 4 parts. Chill till ready to roll out. On floured surface roll dough, one part at a time, 1/4-inch thick. Using a 2 to 3-inch cookie cutter or possibly glass, cut out cookies. Use a spatula to carefully pick up and place cookies on a lightly greased cookie sheet 2 inches apart.
    6. 5. Lightly brush cookies with lemon juice and sprinkle with additional sugar. Use colored sugar for decorative look.
    7. 6. Bake in preheated 375-degree oven for 10-12 min till golden. Don't overcook. Remove cookies to wire rack to cold completely.
    8. Complete baking using one part cookie dough at a time, greasing the pan each time.
    9. Yield: about 5-6 dozen cookies.
