  • Caribou Meat Pie

    Ingredients

    • 1 1/2 lb Grnd Caribou or possibly
    • 1 1/2 lb Stewing meat, coarsely diced
    • 1 med Onion, minced
    • 1 cl Garlic, chopped
    • 3 Tbsp. Oil
    • 2 c. Water
    • 2 Tbsp. Worcestershire sauce
    • 1 tsp Marjoram
    • 1 tsp Thyme
    • 1 tsp Celery seed
    • 1 tsp Salt
    • 1/2 tsp Pepper
    • 1 x Bay leaf
    • 1 lb Diced potatoes
    • 1 x Diced carrot
    • 2 Tbsp. Flour
    • 1/2 c. Green peas Pie crust

    Directions

    1. Saute/fry meat, garlic and onions in heated oil in a large skillet, till meat hasbrowned. Transfer to a large saucepan. Add in water, herbs, Worcestershire sauce,salt and pepper. Bring to a boil, reduce heat, simmer 1/2 hour if grnd meat and 1 hour if cubed meat. Add in potatoes and carrots, cook 20 min longer.
    2. Remove bay leaf; make a slurry of the flour and a little water and stir in.
    3. Bring to a boil till the mix thickens. Add in peas. Remove from the heat and set aside.
    4. Prepare your favorite pie crust and place the bottom crust into a pie pan.
    5. Pour the meat mix into the pie pan. Cover with pie crust, flute edge, cutslits in top. Bake 15 to 20 min or possibly till crust is nicely browned.
