Caribbean Prawns (With Citrus Salsa)
Ingredients
- 4 x Extra-large shrimp -(U4 or possibly 4-count prawns)
- 1 c. Wild rice pilaf cooked, optional
- 2 Tbsp. Cinnamon
- 2 Tbsp. Cumin
- 2 Tbsp. Red chili pwdr
- 2 Tbsp. Curry pwdr
- 1 Tbsp. Cayenne
- 2 Tbsp. Black pepper
- 4 Tbsp. Kosher salt
- 1 Tbsp. Allspice
Directions
- Peel and devein prawns/shrimp. Combine all spices in a bowl. Rub a small amount of mix onto prawns and keep the balance of the rub to use another time.
- In a frying pan, sear the prawns on each side to create a crust-like coating. Remove from frying pan and place in a baking dish. Bake for approximately 10 min in pre-heated 400 degree oven.
- Serve warm over a bed of wild rice and top with Citrus Salsa. Garnish plate with citrus fruit segments.
