Ingredients

  • (Lina's Lemon-Flavored Artichokes) Makes 6 servings This delicious artichoke dish comes from Lina Alberti, who lives in Polizzi Generosa in the Madonie Mountains of Sicily, famous for its good cooking.
  • 1/2 c. extra virgin olive oil
  • 3 x cloves garlic, finely minced
  • 2 c. finely minced onion
  • 2 x anchovy fillets, minced
  • 12 x fresh artichoke hearts, cleaned and quartered, or possibly two (10-oz) pkgs. frzn artichoke hearts, thawed and quartered
  • 6 x fresh mint leaves, minced Salt and freshly grnd pepper
  • 3 Tbsp. water, or possibly as needed
  • 1 Tbsp. freshly squeezed lemon juice, or possibly to taste
  • 1/2 c. toasted bread crumbs

Directions

  1. Put the oil, garlic and onion into a large frying pan and cook over low heat for 2 min. Add in the anchovies and stir with a wooden spoon till melted, about 4 min.
  2. Add in the artichoke hearts and mint leaves to the mix. Season to taste with salt and pepper. Add in water, cover and simmer till artichokes are cooked - about 20 min if fresh or possibly 10 min if frzn and thawed. If necessary, add in a little extra water.
  3. Sprinkle with the lemon juice and bread crumbs. Toss and cook 2 more min.
  4. Taste for seasoning and lemon flavor. Add in a little extra juice, if you like.
  5. Transfer to a shallow serving dish and cold. Serve at room temperature.
