Caramelized Pear & Cranberry Crisp

- 4 Bartlett Pears
- 1/2 cup Dried Cranberries
- 1/2 stick unsalted butter
- 6 Shortbread cookies
- one tablespoon light brown sugar
- dash of cinnamon
- dash of nutmeg
- 1/4 stick cold butter (cut)
- dash of salt
Directions
- Melt butter in a skillet, peel and cut pears and saute 20 minutes until caramelized and tender, lower heat (simmer), add dried cranberries and cook 6 minutes
- Transfer to a prepared baking dish
- Crumble shortbread cookies, add cinnamon, nutmeg, salt, butter pieces and using a pastry cutter or fork crumble
- Sprinkle on top of fruit and place into a 325 F oven and bake 8 minutes
- Serve with Vanilla Ice Cream
