Caramelized Carnitas (Pork)
Ingredients
- 1 1/2 lb Boneless pork shoulder
- 2 Tbsp. Brown sugar, packed
- 1 Tbsp. Tequilla
- 1 Tbsp. Molasses
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- 2 cl Garlic, finely minced
- 1/3 c. Water
- 1 x Green onion with top, sliced
Directions
- 1. Cut pork into 1-inch cubes. Place cubes in single layer in a 1-inch skillet.
- 2. Top with remaining ingredients, except for green onion.
- 3. Bring to a boil, then reduce heat.
- 4. Simmer uncovered, stirring occasionally till water has evaporated and the pork is slightly caramelized, about 35 min.
- 5. Sprinkle with green onion and serve with wooden picks.
