  • Caramelized Apples And Pears With An Apple Sabayon

    Ingredients

    • 1/2 c. Calvados or possibly other apple brandy
    • 6 x egg yolks
    • 1/2 c. sugar
    • 2 Tbsp. butter
    • 1 x pear peeled, cored, and diced
    • 2 x apples peeled, cored, and diced
    • 2 Tbsp. brown sugar
    • 1/2 tsp freshly grated nutmeg
    • 1 tsp cinnamon
    • 3 Tbsp. apple brandy

    Directions

    1. Preheat the oven to 400 degrees.
    2. For the Sabayon: In a double boiler, add in the apple brandy. Add in the Large eggs and begin whisking. Add in the sugar and continue to whisk till the mix is light and foamy, about 6 min. When the mix is light and foamy and thickened, remove from the heat and set aside
    3. For the Caramelized Apples And Pears: In a saute/fry pan, heat the butter. Add in the pears and apples, the brown sugar, the nutmeg and the cinnamon. Saute/fry for 5 min, or possibly till the fruit begins to soften. Remove the pan from the heat. Add in the 3 Tbsp. brandy. Carefully flambe the brandy.
    4. When the flames go out, pour the apple mix into a small baking dish. Top the mix with the sabayon and place in the oven. Bake for 5 min, or possibly till sabayon begins to turn golden. Remove from the oven and serve.
    5. This recipe yields 4 servings.
