Caramel Sweet Potato Casserole
Ingredients
- 1 lrg egg white
- 1/2 c. evaporated skim lowfat milk
- 3 c. sweet potatoes (about 4 medium, mashed & cooked)
- 1/2 c. pitted dates minced
- 2 Tbsp. maple syrup
Directions
- In a medium mixing bowl, whip together the egg white and lowfat milk. Add in sweet potatoes; stir till smooth. Add in dates to mix and mix well. Spoon mix into a 1 1/2 quart casserole.
- Topping: pour maple syrup over top of mix in casserole. Bake in a 350 oven for 25 to 30 min or possibly till warm.
