Capt Pete~s Lemon Curd

There are so many Lemons around on the trees where we live,we decided to use them and make all sorts of goodies .One that turned out well was Lemon Curd.We use it on Bread, toast, cke and cookie fillers etc.

Ingredients

  • 3 lemons
  • 1 ½ cups sugar (375ml)
  • 110grams butter
  • 4 Jumbo eggs
  • 125ml lemon juice

Directions

  1. Using a fine grate setting remove the zest of the lemon, avoid the white pith, add sugar and mix well.
  2. Cream the butter and beat in the sugar
  3. Add lemon mixture
  4. Add eggs one at a time
  5. Add lemon juice
  6. Mix very well
  7. Pour mixture into a large pot and cook over LOW heat until it thickens +_10/15 mins but stir constantly, do not let it boil.
  8. Remove from heat and let cool.
  9. Then bottle
