Ingredients

  • 2 c. all-purpose flour
  • 1/2 c. sugar
  • 2 1/2 tsp baking pwdr
  • 2 tsp instant espresso coffee pwdr
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 c. lowfat milk scalded and cooled
  • 1/2 c. butter melted and cooled
  • 1 x egg slightly beaten
  • 1 tsp vanilla
  • 3/4 c. semisweet chocolate mini chips

Directions

  1. Grease muffin c.. In a large bowl stir together the first six ingredients. In a separate bowl stir together the lowfat milk, butter, egg and vanilla till blended. Make a well in the center of the dry ingredients and add in the lowfat milk mix. Stir just to combine. Stir in the mini chips. Spoon the batter in to the prepared muffin c.. Bake in a 375 degree oven for 15 to 20 min.
  2. Makes 12 muffins or possibly 24 mini muffins
