Capcicum, Cranberry And Pistachio Salad
Ingredients
- 1 head romaine lettuce, torn into bite-size pcs
- 1 x green bell pepper (capsicum), seeded and diced
- 1 x red bell pepper (capsicum), seeded and diced
- 1/2 c. (125 ml) dry cranberries
- 1/2 c. (125 ml) shelled pistachios
- 1/4 c. (60 ml) extra-virgin extra virgin olive oil
- 3 Tbsp. (45 ml) red wine vinegar
- 1 tsp (5 ml) Dijon-style mustard Salt and freshly grnd pepper to taste
Directions
- Combine the romaine, peppers, cranberries, and pistachios in a large bowl. Whisk together the remaining ingredients and toss with the lettuce mix.
- Serves 6 to 8.
