  • Cannellini And Smoked Whitefish Dip/Spread

    Ingredients

    • 2 slc white sandwich bread crusts removed
    • 2/3 c. skim lowfat milk or possibly lowfat milk substitute
    • 18 ounce cannellini beans, cooked liquid removed and rinsed
    • 1 lb smoked whitefish all skin and bones removed
    • 1 tsp fresh garlic chopped
    • 1 tsp lemon zest finely grated
    • 2 Tbsp. fresh herbs minced such as chives/ parsley/ tarragon Salt and freshly grnd pepper Bottled warm pepper sauce

    Directions

    1. Soak bread in lowfat milk for a few min.
    2. Add in beans, whitefish, garlic and zest to a food processor. Pulse to coarsely chop. Add in soaked bread and lowfat milk and process till smooth. Pulse in herbs and season to taste with salt, pepper and drops of pepper sauce.
    3. Store covered and refrigerated for up to 5 days.
    4. Yield: 3 c.
