Candied Yams
Ingredients
- 36 lbs yams
- 4.5 lbs brown sugar
- 4.5 lbs granulated sugar
- 4.5 lbs powdered sugar
- 1 cup cinnamon ground
- 2.5 gals orange juice
- 1.5 gals cold water
Directions
- Peel yams and cut in 1 inch pieces.
- Toss yams in margarine and cinnamon, place on sheet pans and roast until fork tender.
- In the tilt grill, add brown granulated, and powered sugars.
- Add OJ and let sauce simmer and reduce to a syrup.
- If syrup starts to bubble and rise, just reduce the temp.
- Once sauce in reduced to a syrup, add the cooked yams and toss.
- Pan-up yams and place back in the overn for additional 15 minutes, then serve.
