  • Candied Yams

    Ingredients

    • 36 lbs yams
    • 4.5 lbs brown sugar
    • 4.5 lbs granulated sugar
    • 4.5 lbs powdered sugar
    • 1 cup cinnamon ground
    • 2.5 gals orange juice
    • 1.5 gals cold water

    Directions

    1. Peel yams and cut in 1 inch pieces.
    2. Toss yams in margarine and cinnamon, place on sheet pans and roast until fork tender.
    3. In the tilt grill, add brown granulated, and powered sugars.
    4. Add OJ and let sauce simmer and reduce to a syrup.
    5. If syrup starts to bubble and rise, just reduce the temp.
    6. Once sauce in reduced to a syrup, add the cooked yams and toss.
    7. Pan-up yams and place back in the overn for additional 15 minutes, then serve.
