  • Candied Yams

    Ingredients

    • 40lbs Yams
    • 1 1/2 gals Orange Juice
    • 2gals Light Corn Syrup
    • 1/2 cup Ground Cinnamon
    • 1/2 cup Ground Nutmeg
    • 2 1/2 cups Vanilla Extract
    • 1/4 cup Lemon Zest
    • 2 1/2 lbs flour
    • 7 1/2 lbs Brown Sugar
    • 7 1/2 lbs Granulated Sugar

    Directions

    1. Steam whole peeled yams until slightly underdone, to avoid breaking.
    2. Strain, cool and set aside.
    3. In a large container whisk together orange juice, corn syrup, cinnamon, nutmeg, vanilla, and zest.
    4. In another bowl, whisk flour and both sugars together.
    5. Put cooled yams in a 2inch full or 1/2 pan, add dry ingredients (just enough to coat yams) and stir to coat.
    6. Pour liquid (again, enough to coat) over yams and bake for 20 to 25 minutes.
