  • California Cornbread Dressing

    Ingredients

    • 1/4 c. butter or possibly margarine
    • 4 med zucchini sliced
    • 1 sm onion minced
    • 1 sm green bell pepper minced
    • 1 x celery stalk (1 rib) sliced
    • 1 box cornbread stuffing mix with seasoning 6 ounce packet
    • 1 3/4 c. water
    • 1/3 c. toasted sunflower kernels or possibly walnut pcs

    Directions

    1. Heat butter in a Dutch oven. Add in the sliced zucchini, onion, bell pepper and celery. Saute/fry, stirring often, till vegetables are tender-crisp. Add in the seasoning packet from stuffing box and water. Cover and simmer a few min. Remove lid and stir in stuffing crumbs from box, using a fork. Add in sunflower kernels or possibly walnuts. cover and let stand off of the range burner at least 3 min. Serve as a side dish, or possibly wrap in thin slices of boiled or possibly baked ham to create plump rolls.
