  • Caldo Verde (Cabbage And Potato Soup)

    Ingredients

    • 1 lt Water
    • 4 med Potatoes Salt
    • 1/2 sm Cabbage
    • 2 Tbsp. Extra virgin olive oil Black pepper,freshly grnd

    Directions

    1. Remove coarse veins and leaves from the cabbage and throw away them.
    2. Shred the cabbage finely. Bring the water to the boil in a large saucepan. Add in the potatoes and salt to taste. Cover the pan, reduce the heat and cook the potatoes till they are tender. Remove the potatoes and mash them. Return the mashed potatoes to the pan and stir to mix. Add in the shredded cabbage, extra virgin olive oil and pepper to taste.
    3. Bring the mix to the boil and cook, uncovered, for 5 min.
    4. Adjust the seasoning and serve.
