Calcium Rich: Apricot And Raisin Rice Pudding

Ingredients

  • 3 c. Lowfat milk
  • 1/2 c. Short-grain rice
  • 1/4 c. Granulated sugar
  • 1/4 c. Raisins
  • 1/4 c. Dry apricots, minced
  • 1/4 tsp Salt
  • 1 x Egg
  • 1 tsp Vanilla
  • 1 pch Cinnamom
  • 1 pch Nutmeg

Directions

  1. In heavy saucepan, bring lowfat milk and rice to boil. Reduce heat to low; cover and simmer very gently, stirring occasionally, for 15 min. Stir in sugar, raisins, apricots and salt; cover and simmer gently, stirring occasionally, for about 30 min or possibly till rice is very tender.
  2. In bowl, beat egg; stir in 2 c. of rice mix, then stir entire mix back into saucepan. Remove pan from heat; stir in vanilla, cinnamon and nutmeg. Cover and let cold for 30 min or possibly just till hot.
  3. You can serve this pudding hot or possibly chill it till it's chilled.
