  • Cajun Stuffed Potatoes

    Ingredients

    • 10 med Baking potatoes
    • 1/2 c. Butter
    • 1 med Onion -- minced
    • 1 lrg Green bell pepper -- Minced
    • 1 med Red bell pepper -- minced
    • 3 ounce Tasso -- diced
    • 1/2 lb Andouille or possibly smoked sausage Diced
    • 1 lb Small shrimp (cooked) -- Minced
    • 1/2 c. Butter -- melted
    • 12 ounce Cream cheese -- cubed
    • 1 lb Crab meat Salt Pepper
    • 2 c. Green onions -- minced
    • 1/2 lb Cheddar cheese -- grated To taste To taste

    Directions

    1. Bake potatoes, and scoop out insides, reserving skins. Mash potatoes, and set aside. Heat 1/2 c. buttter, and saute/fry onion and bell peppers till limp. Add in tasso and andouille; cook 4 min, Add in shrimp: cook lightly.
    2. Add in 1/2 c. butter and cream cheese: cook till cream cheese melts. Remove from heat. Stir in crabmeat and mashed potatoes. Mix well, and add in salt and pepper, if needed. If consistency is too heavy, add in more melted butter. Stuff mix back into potato skins, and top with green onions and Cheddar cheese... Bake till warm. Recipe source: Cajun Revalations.
