Cajun Sausage n Turkey Jambalaya 400pp@ 3/4c
Ingredients
- 40 pounds turkey, raw ground
- 56 pounds sausage,andouille, cut into 1/2\"coins
- 8 pounds onions, diced
- 8 pounds peppers, green, diced
- 8 pounds celery, chopped
- 24 qts H2O
- 2 cups kitchen bouquet
- 1/3cup cayenne pepper
- 1/4cup black pepper
- 1cup granulated garlic
- 1/3 cup salt
- 1cup parsley, chopped
- 3gal rice, Uncle bens instant
Directions
- Brown turkey until no signs of pink remain. Drain fat and discard.
- Add sausage, onions, peppers, and celery and simmer over low heat until vegetables are tender.
- Add water, gravy coloring, red pepper, black pepper, garlic, salt and parsley flakes. Heat to boiling, reduce heat, and cook for 60 minutes.
- Stir in rice, bring to a boil again. Cover and reduce heat to low. Stir after 15 minutes, cook 45 more minutes or until rice is done.
- Hold at 145.
