  • Cajun Grilled Shrimp Ii

    Ingredients

    • 3 x green onions chopped
    • 2 Tbsp. lemon juice
    • 3 x garlic cloves chopped
    • 2 tsp paprika
    • 1 tsp salt
    • 1/4 tsp freshly-grnd black pepper - (to 1/2)
    • 1/4 tsp cayenne pepper - (to 1/2)
    • 1 Tbsp. extra virgin olive oil
    • 1 1/2 lb shrimp shelled, with tails intact, deveined Lemon wedges for serving

    Directions

    1. Combine onions, lemon juice, garlic, paprika, salt and peppers in 2-qt glass dish; stir in oil. Add in shrimp; turn to coat. Cover and chill at least 15 min.
    2. Thread shrimp onto metal or possibly wooden skewers. (Soak wooden skewers in warm water 30 min to prevent burning.) Grill shrimp over medium-warm Kingsford Briquets about 2 min per side till opaque. Serve immediately with lemon wedges.
    3. This recipe yields 4 servings.
    4. Comments: Frzn shelled and deveined shrimp are a great time-saver; just thaw and cook them.
