Ingredients

  • 2 c. mashed sweet potatoes
  • 1/3 c. sugar
  • 1 pch salt
  • 1 Tbsp. grated orange rind
  • 1 Tbsp. Tabasco brand Pepper Sauce
  • 1/2 c. whole lowfat milk
  • 1/4 x Cajeta caramel
  • 1 Tbsp. brandy
  • 2 lrg Large eggs
  • 2 c. all-purpose flour
  • 1/2 tsp salt
  • 1 1/2 stk sweet butter
  • 3 Tbsp. margarine
  • 1/4 c. ice water

Directions

  1. To make pie shell, blend flour and 1 tsp. salt. Cut butter and margarine into flour. Add in water. Hold together and refrigerate1 hour. Roll out onto pie plate.
  2. To make sweet potato filling, mix sweet potatoes, sugar, salt, orange rind, Tabasco brand Pepper Sauce, lowfat milk, caramel, brandy and Large eggs. Mix well.
  3. Pour into an unbaked pie shell. Bake at 375 degrees for 50 min.
  4. This recipe yields 12 servings.
