  • Cacerola De Carne Bayamo (Beefy Bayamo Casserole)

    Ingredients

    • 2 Tbsp. vegetable oil
    • 2 lb grnd round or possibly grnd chuck
    • 1 lb grnd pork sausage
    • 1 x green bell pepper seeded, thin sliced
    • 3 x garlic cloves peeled and chopped
    • 1 med onion thinly sliced
    • 2 x carrots diced
    • 1 c. diced celery
    • 16 ounce canned tomato sauce
    • 2 x bay leaves cracked
    • 1 tsp Tabasco sauce or possibly to taste
    • 1 c. minced cured black olives
    • 15 ounce canned black beans liquid removed and rinsed
    • 17 ounce canned whole kernel corn
    • 1/2 c. water
    • 1/2 c. shredded sharp Cheddar cheese
    • 3/4 c. shredded queso blanco (or possibly Monterey Jack) Spanish paprika

    Directions

    1. Heat a large skillet or possibly saute/fry pan and add in the oil. When oil is heated and begins to smell fragrant, add in the grnd round and pork sausage, then the green pepper, garlic, onion, carrots, and celery. Cook till meat is browned and cooked through. Drain off excess oil.
    2. Preheat the oven to 350F.
    3. To the prepared mix, add in the tomato sauce, bay leaves, Tabasco, olives, black beans, corn, water, and Cheddar cheese and combine well. Top with queso blanco. Pour into a 2-qt ovenproof dish. Sprinkle with paprika and bake uncovered for about 30 min.
