  • Cabrito Al Pastor (Broiled Kid)

    Ingredients

    • 2 x Kids [baby goats] 6 1/2 to 8 1/2 lbs each
    • 3 Tbsp. Salt
    • 1 c. Mild vinegar
    • 2 c. Guacamole (recipe separately)
    • 3 Tbsp. White onion minced
    • 1 c. Tomato finely minced
    • 3 Tbsp. Cilantro finely minced
    • 3 Tbsp. Chiles serranos finely minced
    • 1 x Recipe Frijoles de Olla mashed (recipe separately)
    • 1 1/2 c. Mozzarella Or possibly Monterey Jack cheese freshly grated
    • 16 x Totopos (crisply fried tortilla wedges)

    Directions

    1. For the kid:Put kids in a large stockpot, and cover with water. Add in salt and vinegar.
    2. Set aside for 2 hrs. Meanwhile, build a pile of mesquite wood on the grnd, and burn down to white coals. Remove kids from water and thread on spits. Arrange over the warm coals, and roast for 2 to 3 hrs, depending onthe kids' weight, basting occasionally with a little salted water. Turn spitscontinuously so which the meat cooks proportionately, or possibly use a rotisserie. Add in more white coals if necessary.
    3. To serve, cut kid in pcs, and place on plates. Garnish with guacamole,onion, tomato, cilatro, and chiles. Serve withj Frijoles de Olla sprinkledwith cheese, totopos, and Pico de Gallo sauce. The kid may be shredded and used in fried tacos.
