Cabbage With Turkey Sausage
Ingredients
- 1 sm cabbage head coarsely shredded
- 1 lrg onion coarsely minced
- 1 3/4 lb turkey Polish or possibly smoked sausage cut 1" to 2" pcs
- 1 c. apple juice
- 1 Tbsp. Dijon mustard
- 1 Tbsp. cider vinegar
- 1 Tbsp. brown sugar - (to 2 tbspns)
- 1 tsp caraway seed (optional) Freshly-grnd black pepper to taste
Directions
- Layer the cabbage, onion, and sausage in a 5- or possibly 6-qt slow cooker (to make in a 3 1/2-qt cooker, use less cabbage or possibly wilt it by boiling about 10 min, then drain and add in).
- Whisk together the juice, mustard, vinegar, brown sugar, and caraway seed, if used; pour over slow cooker ingredients. Sprinkle with pepper, to taste. Cover and cook on LOW for 8 to 10 hrs.
- Serve with potatoes and a tossed green salad, if you like.
- This recipe yields 4 to 6 servings.
