Cabbage Slaw Bake

Tammie and I thought we’d trim down the calories in our January recipes for you and for ourselves! Here’s an easy, inexpensive veggie fix that I found very satisfying. It makes a great side dish or a warm, healthy snac Ingredients
- cooking oil spray
- 16 ounce bag coleslaw mix
- ¼ cup low fat mayonnaise
- 2 tablespoons white vinegar
- 2 teaspoons dry mustard
- ½ teaspoon salt
- 3 ounces blue cheese crumbles
Directions
- Heat a skillet to medium-high and spray with oil.
- Stir fry the coleslaw mix until soft (about 5-6 minutes).
- Stir in the next four ingredients.
- Transfer to an oil sprayed cookie sheet and spread out in a thin, even layer.
- Sprinkle the blue cheese crumbles on top.
- Bake at 375 for 20 minutes.
- Yield: 4 cups
