Cabbage rolls, cabbage burgers, bierocks, there are likely as many names as there are recipes for one of my childhood favorites. Alessa and I decided to celebrate our different heritages this month with food. This particular recipe is from my German/Russian grandmother who was a wonderful cook. She never used a recipe or a measuring cup and all of her dishes were perfect. She of course would have made the bread dough used in this recipe from scratch. I, being the busy working woman that I am, used frozen bread dough. Sorry Grandma!

    Ingredients

    • 1 package frozen rolls (you will use 18 of them in this recipe), thawed according to package directions
    • 1 pound ground beef, browned and drained
    • 1 cup shredded cabbage
    • 1/4 cup white onion, diced
    • 3/4 cup shredded carrots
    • 1 1/2 teaspoon black pepper
    • 1 teaspoon salt

    Directions

    1. Brown ground beef in a skillet, drain fat. Dump the cabbage, onions, carrots, salt and pepper into the skillet with the beef. Cook over medium heat until the cabbage and the onions just begin to soften. Remove from heat.
    2. On a floured surface, roll out the thawed rolls. Each one should measure approximately 5 to 6 inches in a rolled circle or square shape. Using a cookie scoop, place 3 scoopfuls of the beef/cabbage mixture in the center of the dough. Fold all the edges to the center. Place the “roll” on a cookie sheet that you have sprayed with cooking spray seam side down.
    3. Bake at 375 for approximately 20 minutes or until the bread has become golden brown. Makes 18 rolls.
