  • Buttermilk Panna Cotta With Strawberries

    Ingredients

    • 2 c. Buttermilk
    • 1 1/2 tsp Unflavored gelatin
    • 2/3 c. Heavy cream
    • 3/4 c. Sugar
    • 1 pt Strawberries -- hulled and Quartered

    Directions

    1. In top of a double boiler (not over heat), sprinkle gelatin over 1 c. buttermilk; let stand to soften, about 5 min. Meanwhile, bring cream and scant 1/2 c. sugar to a boil. Add in to gelatin mix; place over simmering water; whisk till gelatin dissolves, 5 min. Stir in remaining c. buttermilk. Pass mix through a cheesecloth-lined strainer. Divide among six 4-oz ramekins or possibly small bowls on a baking sheet. Cover; chill till set, 4 hrs. Meanwhile, sprinkle strawberries with remaining sugar, Let stand for about 1 hour. Unmold by dipping ramekins briefly into warm water and running tip of knife around edges; invert onto plates and serve with strawberries and their juice.
