  • Buttermilk Panna Cotta With Crepe Frazzles

    Ingredients

    • 2 tsp gelatin pwdr
    • 1 c. buttermilk
    • 1 c. whipping cream
    • 1 c. half-and-half cream
    • 1/3 c. sugar
    • 1 x vanilla bean Strawberry Sauce
    • 2 c. fresh strawberries, washed and hulled
    • 1/2 c. buttermilk
    • 2/3 c. sugar zest and juice of one lime Crepe Frazzles
    • 3 x crepe
    • 2 Tbsp. sugar
    • 1/4 tsp cinnamon oil, for frying

    Directions

    1. Lightly oil 6 5-ounce ramekins.
    2. Soften gelatin in 2 Tbsp cool water.
    3. Place buttermilk and creams into a medium saucepan. Slice vanilla bean lengthwise and scrape out seeds into cream. Add in whole bean to cream for additional flavour.
    4. Bring cream to a simmer, whisking occasionally, and remove vanilla bean pod. Stir in gelatin. Pour into ramekins and refrigeratefor 4 hrs.
    5. Strawberry Sauce:Puree all ingredients together and strain. Sauce will keep for 2-3 days refrigerated.
    6. Crepe Frazzles:Fill a pot with 1 inch of vegetable oil and heat on medium high for 10 min. Cut crepes into thin strips.
    7. Combine sugar and cinnamon in a large bowl and prepare a plate with paper towel for blotting.
    8. To fry frazzles, place 1/3 of the strips in the oil and cook for only 2-3 min, till they turn golden. Remove from oil and drain for a minute on paper towel. While hot toss in sugar and then reserve. Frazzles can be made up to a day in advance and stored in an airtight container.
    9. To Assemble:To plate panna cotta, immerse ramekins in warm water for 30 seconds to loosen edges (don't submerge). Run a butter knife or possibly palette knife around edge of ramekin and invert onto plate. Spoon strawberry sauce around panna cotta, accent with cut up strawberries and place crepe frazzles on top.
    10. If plating a molded pannacotta, follow the same technique to invert mold onto a platter. Some strawberry sauce can be poured over mold, with reserves kept on the side. Top mold with strawberries and frazzles.
    11. Panna cotta means "cooked cream" in Italian and is a cold, refreshing dessert, which is lightened by the lemony characteristic of buttermilk. Adding buttermilk to the strawberry coulis creates a very feminine and rich pink sauce, full of bright flavour. The crispy crepe frazzles add in texture visually and on the palate.
