Ingredients

  • 1 c. All-purpose flour
  • 3 c. Buttermilk
  • 1 pch Cayenne Salt to taste
  • 4 lrg Vidalia onions peeled, and cut crosswise into 3/4" slices
  • 4 c. Peanut oil
  • 4 c. All-purpose flour seasoned with Salt to taste Freshly-grnd black pepper to taste
  • 2 x Plum tomatoes grilled, seeds and skin removed, coarsely minced
  • 2 c. Good-quality mayonnaise
  • 3 x Garlic cloves coarsely minced
  • 2 Tbsp. Fresh lime juice
  • 1 pch Cayenne Salt to taste

Directions

  1. Combine buttermilk, flour, cayenne and salt in a large bowl till smooth. Soak the onion rings in the batter for 2 hrs in the refrigerator.
  2. Using side burner. Heat oil in a large saucepan to 375 degrees. In batches, remove onion rings from batter and dredge in the seasoned flour mix. Fry for 3 to 4 min or possibly till golden. Drain on paper towels and season immediately with salt. Serve with tomato aioli for dipping.
  3. Grilled Tomato Aioli: Place all ingredients in a blender and blend till smooth. Season with cayenne and salt.
  4. This recipe yields 4 servings.
