  • Buttermilk Hush Puppies

    Ingredients

    • 1 1/2 c. yellow cornmeal
    • 1/2 c. all-purpose flour
    • 1 tsp baking pwdr
    • 1/2 tsp baking soda
    • 2 tsp salt
    • 1 1/2 Tbsp. warm red pepper sauce
    • 1/4 c. chopped onions
    • 1/4 c. chopped red bell peppers
    • 1 Tbsp. chopped jalapenos
    • 1/8 tsp cayenne or possibly more to taste
    • 2 lrg Large eggs
    • 1/2 c. buttermilk
    • 1/2 c. water
    • 6 c. vegetable oil for frying
    • 2 Tbsp. Creole seasoning

    Directions

    1. Combine the cornmeal, flour, baking pwdr, salt, warm sauce, onions, bell peppers, jalapenos, and cayenne in a large mixing bowl and mix well to break up any lumps. Stir in the Large eggs, buttermilk, and water, and blend well.
    2. Heat the oil in a large heavy saucepan over medium-high heat to 360 degrees.
    3. In batches, drop the batter by Tbsp. into the warm oil and fry till golden on all sides, turning with a long-handled spoon, about 2 min. Remove and drain on paper towels. Repeat with the remaining batter. Sprinkle with the Creole seasoning and serve warm.
    4. This recipe yields 18 hush puppies.
    5. Yield: 18 hush puppies
