Buttermilk Chocolate Chip Pancakes

Ingredients

  • 1 c. buttermilk
  • 2 T melted butter
  • 1 egg
  • 1 c. white flour
  • 1 teaspoon baking soda
  • 2 T sugar
  • 1 teaspoon vanilla
  • 1/3 c. semi-sweet chocolate chips
  • 1/4 teaspoon salt

Directions

  1. Beat the buttermilk, melted butter and egg together.2. Mix the dry ingredients thoroughly in a separate bowl.
  2. Add in dry ingredients to the liquid, stirring ONLY to moisten.
  3. Stir in chocolate chips.
  4. Spoon onto a hot frying pan that has been lightly greased. Bake till bubbles appear, then turn over.
  5. Serve pancakes immediately, topped with a spoonful of butter.
  6. TIPS: For variation, try using 1/2 cup mashed bananas instead of the chocolate chips. For thinner pancakes, add in more buttermilk.
  7. Makes 10 (5 inch) pancakes.
