  • Butter Tart Slices

    This is the easy way to have butter tarts. It is quick, easy, delicious, and versatile and also freeze well.

    Ingredients

    • 1/2 C butter or margarine
    • 2 Tbsp icing sugar
    • 1-1.2 C All purpose flour
    • 1-1/2 C brown sugar, lightly packed
    • 1/4 C melted butter or margarine
    • 3 eggs
    • 1 Tbsp vinegar
    • 1 Tsp. Vanilla
    • 1 C Raisins or currents or nuts or both or neither
    • Optional: 1 C rolled oats – to make oat squares

    Directions

    1. Crust - Cream ½ C butter and icing sugar.
    2. Blend in flour.
    3. Pat into a 9 x 9 pan.
    4. Bake for 5 minutes
    5. Filling - Combine remaining ingredients.
    6. Pour over base.
    7. Bake at 350 for 30-40 minutes or until set.
    8. Cut into squares or fingers.
    9. Alternatively, you can double the recipe and put it into an oblong pan for a thicker shortbread base
