Butter Lettuce & Fig Salad with Bacon and blue Cheese

Sweet, nutty figs are terrific with salty meats and cheese. Serve this salad on a warm night with a glass of chilled pinot grigio or rose.

Ingredients

  • 1 tablespoon finely chopped shallot
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon red wine vinegar
  • 6 tablespoons extra virgin olive oil
  • 1 head of red butter lettuce, washed and torn into bite-sized pieces
  • 8 large fresh figs (any kind will do)
  • 3 ounces crumbled blue cheese or Gorgonzola
  • 6 slices good quality bacon, cooked until crisp and diced
  • salt & freshly ground black pepper, to taste

Directions

  1. In a small bowl, whisk together shallots and vinegars. While whisking, drizzle in the olive oil in a slow, steady stream until the dressing comes together. Whisk in salt and pepper.
  2. In a large bowl, combine the lettuce, figs, blue cheese and bacon. Toss in the desired amount of vinaigrette and season to taste with salt and pepper. Serve immediately.
  3. Alternatively, you can just dress the lettuce and put desired portion on each plate, top with bacon, figs and blue cheese. Drizzle with a little more dressing. I find this works better to get the desired amount of cheese, bacon and fig for each serving. It also keeps the lettuce a little crisper.
