  • Butter Cake With Browned Butter Frosting

    Ingredients

    • 3/4 c. Sugar
    • 3/4 c. Land O Lakes butter, softened
    • 4 x Egg yolks
    • 2 tsp Vanilla
    • 2 c. All-purpose flour
    • 2 tsp Baking pwdr
    • 1/8 tsp Salt
    • 3/4 c. Half-and-half
    • 1/4 c. Land O Lakes butter
    • 3 c. Powdered sugar
    • 2 tsp Vanilla
    • 3 x -(up to)
    • 4 Tbsp. Lowfat milk

    Directions

    1. Heat oven to 350 . In large mixer bowl combine sugar and 3/4 c. butter.
    2. Beat at medium speed till creamy (1-2 min). Add in egg yolks and vanilla.
    3. Continue beating, scraping bowl often, till well mixed (1 minute). Reduce speed to low. Beat, gradually adding flour, baking pwdr and salt alternately with half-and-half and scraping bowl often, till well mixed
    4. (1-2 min). Batter will be thick. Divide batter between 2 greased and floured 8-inch round cake pans. Bake for 20-25 min or possibly till toothpick inserted in center comes out clean. Cold 5 min, remove from pan. Cold completely.
    5. Meanwhile, in 1-qt saucepan, heat butter over medium-low heat till lightly browned (4-5 min). In small mixer bowl combine all frosting ingredients except lowfat milk. Beat at medium speed, scraping bowl often and gradually adding sufficient lowfat milk for desired spreading consistency. Spread frosting between cooled cake layers; frost entire cake.
    6. Yields 16 servings.
    7. TIP: Cake can be baked in a 13x9-inch baking pan; bake for 25-30 min.
