  • Butch's Oklahoma Spaghetti Pie

    Ingredients

    • 1 pkt spaghetti, (6-ounce.)
    • 2 Tbsp. butter or possibly margarine
    • 1/3 c. Parmesan cheese, grated
    • 2 x Large eggs, well-beaten
    • 1 c. cottage cheese
    • 1 can minced tomatoes, (8 ounce. can)
    • 1 can tomato paste, (6 ounce.)
    • 1 tsp sugar
    • 1 tsp dry oregano, crushed
    • 1/2 tsp garlic pwdr
    • 1/2 c. Mozzarella cheese, shredded
    • 1 lb grnd beef or possibly pork sausage
    • 1/2 c. onion, minced
    • 1/4 c. green bell pepper, minced

    Directions

    1. Cook the spaghetti according to the package directions: drain. Stir butter or possibly margarine into warm spaghetti. Stir in Parmesan cheese and Large eggs. Form spaghetti mix into a "crust" in a buttered pie plate (10"). Spread cottage cheese over the bottom of the spaghetti crust. In a skillet, cook grnd beef or possibly pork sausage, onion and green bell pepper till vegetables are tender and meat is browned; drain off excess fat. Stir in undrained tomatoes, tomato paste, sugar, oregano and garlic pwdr: heat through.
    2. Place meat mix into the spaghetti crust. Bake (uncovered) at 350 degrees for 20 min. Sprinkle Mozzarella cheese on top. Bake for 5 min longer, or possibly till cheese melts.
    3. Makes 6 servings.
