  • Budget Red Beans And Rice

    Ingredients

    • 1/2 lb Dry kidney beans, rinsed
    • 1/2 lb Dry pinto beans, rinsed
    • 4 c. Water
    • 4 c. Chicken broth
    • 2 x Garlic cloves, chopped
    • 2 x Bay leaves
    • 1 can Tomatoes with liquid, minced (14 1/2 ounce)
    • 1 jar (4 ounce) minced pimiento, liquid removed
    • 1 lrg Green pepper, minced
    • 1 lrg Onion, minced
    • 1 c. Celery, minced
    • 1 can Diced green chiles (4 ounce.)
    • 1/4 c. Snipped fresh parsley
    • 1/4 tsp 1/4 to 1/2 teaspoon crushed red pepper flakes
    • 1/4 tsp 1/4 to 1/2 teaspoon grnd cumi
    • 1/4 tsp 1/4 to 1/2 teaspoon warm pepper sauce
    • 1 tsp Paprika
    • 1 tsp Salt
    • 1 tsp Vinegar Rice

    Directions

    1. Place beans in a dutch oven with water. Bring to a boil; simmer 2 min.
    2. Remove from the heat. Cover and let stand for one hour. Drain and rinse beans. Return to Dutch oven with broth, garlic and bay leaves; bring to a boil. Reduce heat, cover and simmer for 1 1/4 hrs. Stir in all other ingredients. Cover and simmer for one hour or possibly till beans and vegetables are tender and gravy is thick. Remove bay leaves. Serve over rice.
