Budget Bisquik Peanut Butter Oatmeal Cookies

No eggs. No milk. Ingredients you have on-hand. Yup, this recipe was born of innovation late one night when I wanted something sweet. And, at a cost of less than 10 cents per cookie, they're perfect for bake sales or parties. Recipe can easily be doubled or tripled for larger batches and is VERY forgiving of variations. Try stirring raisins (or chocolate chips) into the batter. Or top with M&M's or Hershey Kisses instead of raisins. Flatten each cookie slightly with a fork before baking for a 'decorated' look.

Ingredients

  • 2 cups Bisquik or Pioneer baking mix
  • 1 cup prepared instant oatmeal (1 individual serving packet + 1/2 cup hot water)
  • 1 cup brown sugar (can use half white sugar, or if you don't have any brown sugar on hand use all white sugar + 2 tbsp molasses)
  • 2 tbsp additional water
  • 2 TBSP peanut butter
  • 1/4 cup oil
  • Optional - handful of raisins

Directions

  1. Preheat oven to 375
  2. Lightly grease cookie sheet (or cover with aluminum foil, shiny side up, for non-stick super easy cleanup)
  3. Mix everything except the raisins thoroughly in a mixing bowl
  4. Drop by the tablespoonful onto cookie sheet
  5. Place 1 - 3 raisins on top of each cookie if desired
  6. Bake for 12 - 16 minutes
  7. Allow to cool for a few minutes before serving (don't burn your fingers) ;)
