Shredded brussels sprouts, fresh pear, pecans, and blue cheese tossed in a ginger vinaigrette dressing. Ingredients
- Ginger Dressing:
- 1 TBSP white balsamic vinegar
- 1 TBSP water
- 1/2 tsp Dijon mustard
- 1/4 tsp ginger root, minced
- 1 TBSP peanut oil
- 1 TBSP extra virgin olive oil
- Salad:
- 1/2 tsp peanut oil
- 1/2 cup pecans
- 1 lb brussels sprouts, shredded
- 1 medium pear, diced
- 2 oz blue cheese crumbles
