Brown Rice Salad

Ingredients

  • 1 c. rice, brown
  • 6 x spring onions
  • 1/2 c. corn kernels
  • 1 x red capsicum
  • 1/3 c. currants
  • 60 gm cashew nuts, roasted
  • 2 Tbsp. sunflower seeds
  • 1/4 c. vegetable oil
  • 1 tsp sesame oil
  • 1 Tbsp. soy sauce
  • 1 Tbsp. lemon juice
  • 1 tsp garlic, crushed
  • 1 tsp ginger, crushed
  • 1/2 tsp honey
  • 1/10 tsp chilli paste salt, pepper

Directions

  1. Dressing:Put all ingredients in a screw topped jar and shake well to blend before using.
  2. Cook the rice in boiling salted water for 30-40 min till tender. Rinse and drain well.
  3. Chop the spring onions and capsicum fine.
  4. Transfer the rice to a bowl while still hot and add in the spring onions and remaining ingredients. Toss thoroughly and transfer to a serving dish.
  5. Serves 6-8.
