Brown Rice And Apricot Salad
Ingredients
- 2 c. assorted brown rice (500 ml)
- 2 Tbsp. toasted peanut oil (30 ml)
- 3 Tbsp. apple cider vinegar (45 ml)
- 1/2 sm chili, finely minced
- 3 x green onions minced grated zest and juice of 1 orange
- 1/3 c. minced dry apricots (75 ml)
- 1 x red pepper, sliced into strips coarse salt and freshly grnd pepper, to taste minced fresh cilantro, to taste
Directions
- Cook rice in boiling, salted water according to package directions. Strain and cold.
- In a medium bowl combine remaining ingredients with rice and toss till well blended. Season with salt and pepper and sprinkle with some minced fresh cilantro.
- The brown rice gives a good nutty flavour to this salad while the orange and orange zest gives it which fresh zing!
